Spiced Carrot and Potato Soup

Ingredients:

  • 2 Onions
  • 4 Medium potatoes
  • 2 Sweet potatoes
  • 3 Celery sticks
  • 2 tbsp oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp mild chilli
  • 6 bay leaves
  • 1.5 litres vegetable stock

Method:

  1. Sauté onion and celery in the oil and spices until soft. 
  2. Add roughly chopped carrots & potatoes, bay leaves and veg stock.  Simmer for 20-25 mins until vegetables are soft.  
  3. Remove bay leaves, blend and serve with toasted pumpkins seeds and yogurt
