Chilli Sin Carne


  • 1 tbsp vegetable oil
  • 1 medium onion, chopped
  • 2 cloves of garlic
  • 1 medium courgette, chopped – optional
  • 1 tsp mild chilli powder
  • ½ tsp hot chilli powder
  • ½ tsp smoked paprika
  • 1 tin mixed beans
  • 1 tin red kidney beans
  • 400 ml passata (or 1 400g tin chopped tomatoes)
  • 2 tbsp tomato puree
  • 1 tsp sugar
  • Salt and pepper to taste


  1. Sauté the onion & garlic until beginning to soften
  2. Add the courgettes and spices and continue to cook until all vegetables have softened
  3. Add 400ml of passata (or 1 x 400g tin of chopped tomatoes) and bring to a simmer
  4. Add the drained beans, tomato puree, sugar, salt and pepper.  Simmer for 20 – 30 mins until thickened.

Note – you can cook this slowly in the oven (140oC for 1 hour) and the flavour develops really well.
